There's no need to be snide. Besides actually being more complicated than your simplified example makes it, you don't run around all winter with an oil temp of 0C so they aren't the same even then.
Nope, but cold starts in any winter climate that 5wxx oil is flowing the same, rather its 5w20-5w30-5w40-5w50!

I wouldn't run anything less than a 30wt in these motors period! The thin crap was purely spec'd for CAFE reasons only and Fords arm being twisted for fleet MPG ratings at the expense of engine longevity. There is MANY reasons ford Back Spec'd to 5W30 in the later years of the Coyote and always stated 5W50 for any track use. Lets face it, most mustang owners run the heck out of these things on a daily basis!

Well stock cams are on national backorder with no ETA, so if I can’t track one down I’ll be getting comp NSR stage 2 blower cams. Bummer, would rather save $2k and stay stock.

While I’m in the motor I’ll be replacing all followers, adjusters, cam cap bolts (TTY), cam phaser bolts (TTY), as well as primary and secondary chains.

For the lube lovers, I’ll be going 5w50 motorcraft because Roush does with their kits.

Am I missing anything?

yes, billet OPG's and CS. if your that far into it, do the pump gears and crank sprocket.

But I get why you or anyone would want to run it. Ford won't ever deny warranty using Ford's oil.

Warranty is long gone unfortunately lol. Figured being in a cold climate, frequent oil changes, and minimal yearly mileage that wouldn’t be a bad thing in my case.

If you want the best protection look for an oil that meets A3B4 euro spec. That spec is for wear protection where as all new oil specs are for emissions.
