Wife has family coming up this weekend, some came yesterday from Panama City and some will be here today from Pennsylvania.

I let this Boston Butt sit in the fridge for a few hours with a mustard binder and SPG and Meat Church Honey Hog for the seasoning.

On the smoker last night at 8pm, 250°, kept checking all night...165° internal at 2am so I pulled and wrapped it with butcher paper. Pulled it a few minutes ago at 5:40am, internal was 203° but I could feel the tenderness with the probe.

Wrapped with aluminum foil and then with a towel and it's resting in a cooler. I let it rest for 8 hours last time and it was incredible. So we may get a late lunch or it might sit until 5 or so for dinner when the others arrive.

Got a made from scratch Apricot Crumble cake on deck after I go out and get the ingredients later on this morning.

I made one last time they were here, wife pulled it from the oven and set it across a hot burner and scorched the bottom of half the cake. Her aunt and uncle from PA were fighting over the leftovers from the good half 🤣 So I know I gotta make another one lol

I gotta remember pics when we cut into it!

Made from scratch vanilla and cream cheese cake, layered with Apricot preserves and then topped with cinnamon and coconut. Can't wait.

Nice, doing some special ribs tomorrow but tonight is going to be something they were just throwing the other. Pics to follow.
Can't wait to see! Sounds great!

I got rave reviews on everything, one of the aunts threatened to take the entire leftover cake and a fork to her bedroom tonight lol

It's funny to me how pictures skew the size, that's an almost 10# Boston Butt in the pic but it looks like enough for 4 sandwiches 🤣
I agree, it looked pretty big to me. I always buy more than my eyes can eat.

It fed 12 people and we split the leftovers! I took enough home for 2 good size sandwiches and left them enough for about 8 more. It was damn good and I'm not saying that just bc I cooked it lol

Brought a bunch of homemade sausage over to the in-law's house since they're hosting so many people, so of course I got recruited to cook it lol

Forgot to take pics.

I kinda hate coming over to large family functions...so many hands and fingers in the food, it's hard to figure out what's safe to eat unless you watch over the entire spread like a hawk...

Odd dinner tonight lol. I found some fresh peas of some sort and threw them in a pot to get them going.

Had some leftover sausage, some fresh ears of corn that really needed to be cooked soon. And I was hankering for some spicy/low country boil, however I eat shrimp but not fish.

So that's dinner for me, I threw some of my pickled okra on the plate just because. I need a better recipe, this one isn't quite what I'm looking for.

The low country spice is good...I picked it up 2 weekends ago. Took a 6 hour round trip to the coast bc I caught wind of a seafood market that was running a $4 special on medium ish shrimp. About 38 to a pound, not bad, heads off. Plus I needed an excuse to take a trip in the wife's new Bronco.

I have some fish thawed out for her dinner when she gets home, she won't eat the spicy stuff lol
