No idea what I'm doing here. Had to cook this thing and had no idea what to do with it. Soooo...

I deboned and fileted a pork loin roast...should have taken pics during assembly lol.

Bell peppers and onions on the inside, covered with some Traeger pork seasoning and mozzarella cheese. Rolled up, butcher tied, seasoned with Lane's Signature rub.

Gonna throw it on the smoker later.

Personally I would have went with jalapeños and Swiss...but I know the wife ain't gonna like that.

We will see how this turns out later on.

Yeah, I'm curious. I want to see this meat and cheese cannonball in all of it's smoked glory.
Cannonball!!! I'm dying lol

I wound up having to go somewhere unexpected and got back later than I wanted so it's sleeping in the fridge. Hopefully cook it tonight if nothing else comes up! I was excited to cook it!

Haven’t been cooking as much as I’d like lately (sick elderly mom…. Massive work projects….life….meh)

Made a stellar mushroom risotto recently. With cumin lamb chop and cranberry chutney

My favorite recent meal though, was something my wife mostly made. Collard greens on rice with Conecuh sausage. She cooks her greens with weird s**t like Vietnamese fish sauce and pomegranate syrup. It’s crazy good.

Presentation and flavor are awesome! Smoke flavor is great, it was on for a little over 3 hours before it hit 155° internal...

I think I should have pulled it a little earlier. Not tough or dry at all but I think it would be more tender if pulled sooner. Also I think I should sauté the veggies first, still a little crunchy. And more cheese! Lost some during the cook somehow although I didn't see any.

7.5/10 although I think the changes above would bump it up to 9.5/10. Not bad for the first time!

Duuuuuuude!!!
Took some leftovers and diced it up, pan fried...that made the veggies tender the way I like them.

S&P, some more cheese and it made a hell of a hearty 4 egg omelette. Man it was good!
